Easy Apple Pie Yogurt Bowl with Warm Cinnamon and Honey

This warm, delicious, easy breakfast is fast and full of flavor.  Apples, cinnamon, honey, and vanilla simmered with juicy apple slices, served over yogurt is eating apple pie without the gilt. The crisp oats give it that delicious crunch.

This recipe is for a single serving, double for larger portions, or another person.

Easy Apple Pie Yogurt Bowl with Warm Cinnamon and Honey

Ingredients

  • 1 ½ teaspoon Virgin Coconut Oil
  • ½ apple, sliced core and seeds removed, skin optional (McIntosh)
  • ¼ cup Old Fashioned Oats
  • ¼ teaspoon Cinnamon
  • 1/8 teaspoon Vanilla Extract
  • 1 cup Honey Yogurt substitute for vanilla or plain
  • 1 tablespoon Honey buy local if you can
  • Optional Toppings: granola chopped nuts, sprinkle of sugar

Instructions

  • Prep stovetop: Turn on low to medium heat using cast iron pan
  • Cut the apple into slices, about ¼ inch thick, thinner, or thicker as desired.
  • Add coconut oil to heated pan
  • Toss in oats and apples, stir evenly with coconut oil
  • Add cinnamon and vanilla extract, stir
  • Stir every few minutes until cooked, about 10-15 minutes. Apples will be soft and oats will be crisp, lightly golden color.
  • Remove from heat and set aside to cool.
  • Add yogurt to serving dish and top with apple mixture, serve immediately*

Notes

*Keep apple mixture and yogurt separate until serving as oats will become soggy sitting on top of yogurt after some time.
